Announcing Latest Issue of The Forum for Family and Consumer Issues

Greetings: This note is to introduce the latest issue of The Forum for Family and Consumer Issues found at http://ncsu.edu/ffci. You may have already read this issue as I should have sent this announcement out quite a while back. I am including the Welcome and the paper abstracts below: Welcome! Promoting the health and wellbeing of our country’s youth is an effort I believe all citizens and professionals support. Our youth and their families play pivotal roles in our society. Yet there is much that we need to learn about our youth and how they as a population have increased in size and have changed in needs and behavior over the years. For instance, children and adolescents from birth to age 17 now constitute one-fourth of our country’s population. The U.S. adolescent population increased by 16.6 percent from 1990 to 2000 and the population is projected to increase to an estimated 41.6 million by the year 2010. While the youth are healthier than adults in general, from 13 to 23 percent experience special health care needs or chronic illnesses and disabilities. In 2005 the Centers for Disease Control and Prevention Youth Risk Behavior Surveillance survey showed that 14.5% of students in grades 9 to 12 had lifetime asthma and 13.1% were overweight. To add to the health issues large differences exist between the stresses, pressures and lifestyles lived by today’s youth than that previously experienced by earlier generations. Seventy one percent of all deaths among persons aged 10 to 24 years result from four causes: motor vehicle crashes, other unintentional injuries, homicide and suicide. Professionals who serve our population of youth need more knowledge, skills, tools, and training to promote positive outcomes. In this issue we offer a diversity of papers that focus on a variety of approaches to and issues that surround our youth and their eventual growth, health and wellbeing. They cover the gamut from older youth reaching younger youth to supporting pediatricians with parenting information, and from direct delivery of educational curriculum to students to looking at the role of parental communication quality on youth behavior. These papers will benefit many areas of your efforts with youth. Enjoy! Paper Abstracts: Recruiting college students to be youth mentors Kathy Dimick,Utah State University Extension System; Brian J. Higginbotham, Stacey MacArthur, Utah State University; Monti Poulson, Utah State University Extension System Abstract Mentoring programs are becoming an increasingly popular intervention to promote positive youth development. However, in the United States there are more at-risk youth than there are mentors. One concentrated source of mentors is students on college and university campuses. This article discusses the recruiting strategies employed by one Extension-sponsored mentoring program. The three strategies outlined have been instrumental in securing committed and caring college-aged mentors. Rites of passage during adolescence Scott D. Scheer, Stephen M. Gavazzi, The Ohio State University; David G. Blumenkrantz, Center for the Advancement of Youth, Family, and Community Services, Inc. Abstract The literature on rites of passage in adolescence is reviewed, with particular attention given to the essential components for positive developmental outcomes. Three human development orientations – life course, life span, and life cycle – are presented to examine rites of passage as they relate to life transitions. Within these orientations, positive rites of passage are framed as requiring both events and cognitive processes of the event. In other words, rites of passage events must be significant for adolescents not only as experiences, but having special meaning, emotion, and understanding. A model is introduced that highlights the potentially positive and negative roles that rites of passage can play in the transition to adulthood. In addition, investigations are discussed to help understand the complex rites of passage mechanisms. Finally, the benefits of employing rites of passage strategies are illustrated through youth development programs. Family life educators supporting pediatricians with parenting information Karen DeBord, Rebecca Stelter, North Carolina State University Abstract Pediatricians report seeing 40 to 60 patients per day. Many parents of these patients have specific questions about behavioral and developmental issues such as discipline, sleep, nutrition, and toileting, all of which are topics that family life educators are prepared to address routinely. Collaboration between Extension educators and pediatricians can benefit patients, parents, and pediatric practices, as well as family life education programs. Adolescent nutrition and exercise behavior: A preliminary investigation into the role of parental communication quality Kay M. Palan, Mary Lynn Damhorst, Iowa State University, Jennifer Paff Ogle, Colorado State University; Cheryl O. Hausafus, Cheryll A. Reitmeier ,Iowa State University ; Grace Marquis, McGill University Abstract This paper addresses an issue that has received little attention within the literature: the role that parents play in shaping children’s nutrition and exercise beliefs and behaviors. Of particular interest was the influence of parental style and the quality of parent-child communication upon children’s nutrition and exercise beliefs and behaviors. Twenty family units with a child in middle school were studied during home visits. Data were collected with a survey instrument, including measures related to parent-adolescent communication quality, warm and restrictive parenting styles, adolescent nutrition concern, adolescent weight loss behaviors, and adolescent exercise commitment and satisfaction. Results suggest that adolescents’ nutrition concerns were positively related to good communication quality and restrictive parenting behaviors, and they support the significance of parental communication on adolescents’ nutrition and exercise attitudes and behaviors. Implications for education and intervention are identified. Morality and money: Relating character and values to financial education in grades K-4 Thomas A. Lucey, Illinois State University; Duane M. Giannangelo, The University of Memphis; Jeffrey M. Hawkins, Oklahoma State University (Tulsa Campus); Julia A. Heath, Michael M. Grant, The University of Memphis Abstract This study examines the inclusion of a moral component to teaching financial education to children in grades K-4. Comparisons were made between current financial education areas and suggested moral items. Morality was defined and measured by modifying items from the courtesy, generosity, and sportsmanship subscales of Bulach and Butler’s (2002) survey. The study found that levels of agreement with financial morality items were similar to the levels of agreement with the generally accepted areas. Findings must be extended to a larger sample for confirmation or refutation, using a more extensive measure of financial morality. The authors invite further examination into the prospect of developing moral tenets within financial education. Got Calcium? - A youth curriculum that promotes dairy and non-dairy sources of calcium Martha Raidl, Rhea Lanting, Katie Miner, Joey Peutz, University of Idaho Abstract Most children are not meeting dietary calcium requirements. To address this issue, a four-lesson youth curriculum called Got Calcium?, which promotes dairy and non-dairy calcium-rich foods, was developed. Two hundred and thirty-two students and 196 family members participated in the study. After four lessons, students significantly increased (p<0.001) their knowledge of calcium and calcium-rich foods. A parent take-home food frequency form revealed that students’ current intake of calcium came from dairy (milk, cheese, yogurt) products. By the end of the four lessons, approximately 40 percent to 70 percent of students selected non-dairy calcium-rich foods (kale, greens, tofu, and salmon) when planning calcium-rich meals. Strengthening Families Through Military 4-H Partnerships Debra A. Jones, Joanne Roueche, Utah State University Extension Abstract Extension, 4-H, and the military have been partners since World War I. Through the recent decade, the U.S. Army, Air Force, and 4-H have partnered to provide positive youth development on military installations involving over 7,000 youth in 4-H clubs in the U.S. and abroad. In the aftermath of September 11, 2001, a new initiative extends this same support to military youth and families who are not affiliated with military installations, but who are dispersed in rural, urban, and suburban communities across the nation through the National Guard and Reserve. All youth involved through military outreach are enrolled as 4-H members through their respective counties. As the program becomes more widely known, counties integrate these youth in local, state, regional, and national 4-H activities and events. Authors share their experience developing relationships, implementing positive youth development programs, and explain how these successful actions resulted in funding sources for increased outreach. Youth Teaching Youth: Evaluation of the Alcohol/Tobacco Decisions cross-age teaching program Carly Emil, Jodi Dworkin, Carol Skelly, University of Minnesota Extension Abstract The Alcohol/Tobacco Decisions (ATD) program was developed by the Extension Service in a midwestern state. The program’s unique format of cross-age teaching uses local high school students to instruct fourth-grade students, rather than the typical teacher-to-student format. The ATD program operates under the 4-H model of promoting positive youth development and older youth teaching younger youth. To begin to evaluate the effectiveness of the ATD program in changing students’ knowledge of alcohol, tobacco, and advertising, students completed a pre- and post-test. This pilot evaluation yielded statistically significant improvements in knowledge in all content areas. Future directions for evaluation of cross-age teaching programs are explored. -- ***************************************************************** Jacquelyn W. Hi Everyone, A while back, I asked for leads for pictures of nutrient deficiencies for a coworker. I'm happy to report two possible sources for those of you that might be able to use them in your programs. SOURCE ONE: My coworker, Kelly Fisher, RD, discovered an answer to her own question in the Public Health Image Library of the Department of Health and Human Services - Centers for Disease Control and Prevention Website at http://phil.cdc.gov Here is some information Kelly put together for me to share with you: The web-site will take you to the home page of the Public Health Image Library (PHIL) where there is an area to search for pictures, illustrations, or videos. Down at the bottom under each picture it will discuss copyright restrictions... if it says "none," they are public domain pictures and available for anyone to use (just cite the picture according to their directions)... if there are restrictions on a picture, you'll have to contact that individual or group for permission. SOURCE TWO: After getting source one to share from Kelly, I discovered a possible second source -- the image library of the National Library of Medicine of the National Institutes of Health at http://wwwihm.nlm.nih.gov/ These must be ordered (I couldn't determine from Web site if there was a charge -- however, there is a contact email address) and information about reproduction rights is cited as unknown for some. This concept predicts weight gain/weight loss based on the First Law of Thermodynamics (change in stored energy in the body equals energy intake minus energy expenditure ) and the Second Law of Thermodynamics (conversion of excess energy into new tissue requires energy ). Dr. Nancy F. Butte and her colleagues at the USDA/ARS Children's Nutrition Research Center, as well as colleagues from Denmark, attempted to develop a model using growing children. They could then predict the total energy cost of weight gain and the necessary increase in energy intake and/or decrease in physical activity level associated with weight gain in children and adolescents. Interestingly, the pediatric model demonstrates that the energy intake necessary for additional weight gain among overweight children was greater than previously thought. Dr. Butte explains, "Previous estimates did not take into account the energy necessary to support a greater body mass. Since January 2008, short (less than 3 minutes) PodCasts are posted to the website every month. In each PodCast, Dr. Brian Wansink, Executive Director of USDA's Center for Nutrition Policy and Promotion, interviews people or posts a story in news format describing how small steps can make a big difference for people trying to make changes in their weight and health. View the current releases at ( www.mypyramid.gov/podcasts <http://www.mypyramid.gov/podcasts> ). -- January New Year's Resolutions - Dr. Wansink interviews customers in the supermarket about their New Year's resolutions. -- February: Just Get Moving - Dr. Wansink and his daughter, Audrey, find out how different parents keep their families physically active on a daily basis. -- March: Nutrition Gatekeeper - Dr. Wansink heads back to the supermarket for interviews with moms who select healthy foods their families will really eat. ********** Prebiotics: Another Key for Improving Bone Health Attaining peak bone mass during the teen years is essential to guard against fractures and osteoporosis later in life. Dietary intake of calcium and physical activity influence bone mass. However, most teenagers do not consume the 1300 mg/day of calcium currently recommended as the adequate intake (AI) for this age group. Now, investigators have found that substances called prebiotics can increase calcium absorption so that a higher percentage of the calcium teenagers eat stays in their bodies and helps to strengthen bones. Dr. Steven Abrams and his colleagues at the USDA/ARS Children's Nutrition Research Center have studied bone metabolism in-depth and have identified different ways to help teens reach their peak bone mass. His recent article can be found in the November 2007 issue of The Journal of Nutrition ( http://jn.nutrition.org/content/vol137/issue11/ <http://jn.nutrition.org/content/vol137/issue11/> ). EDITOR'S NOTE: Prebiotics are substances found in some foods that promote the growth of beneficial bacteria in the intestines. Some prebiotics have the ability to increase calcium absorption. Teens were given a prebiotic to mix with calcium-fortified orange juice or milk for one year. Their calcium absorption and bone mass were compared to a similar group of teens in the control group. The teens who took the prebiotic preparation absorbed more calcium and accumulated more bone mass than the control group teens. While not all teens receiving the prebiotic showed an increase in bone mass, for those who had a response, it was comparable to consuming about an extra 7 ounce glass of milk each day. Dr. Abrams adds, "Although these results are encouraging, we recognize that consuming prebiotics should be just one part of an overall public health strategy to increase calcium intake and absorption. Our desired outcome is to promote total bone mass accumulation during the critical teen years." NOTE TO PRACTITIONERS AND PARENTS: Encourage teens to consume sufficient calcium and vitamin D while emphasizing physical activity to develop peak bone mass. Prebiotics may also help to increase bone mass during adolescence. ********** School Nutrition Policies Make a Difference Recent public health efforts to curb the rising rates of childhood obesity have focused on public schools. Federal regulations exist for the National School Lunch Program (NSLP); however, there are few regulations for foods sold in snack or vending machines. Dr. Karen Cullen and her colleagues at the USDA/ARS Children's Nutrition Research Center reviewed the impact of the Texas School Nutrition Policy, an unfunded mandate to promote a healthy school environment for Texas students, and found that it was successful. Additional information can be found in the January 2008 issue of the American Journal of Public Health ( www.ajph.org/content/vol98/issue1 <http://www.ajph.org/content/vol98/issue1> ). The Texas School Nutrition Policy was implemented statewide in the fall of 2004 and applied to ALL school food sources including vending machines. For middle schools, the policy restricts the portion sizes of high-fat and sugar snacks, as well as sweetened beverages. It also limits the frequency of serving high-fat vegetables, such as French Fries, to a 3 oz. serving no more than 3 times/week. The results were impressive. An analysis of more than 12,500 lunch food records collected before and after implementation of the Texas School Nutrition Policy showed student lunch consumption of vegetables, milk and several nutrients (protein, fiber, vitamins A and C, calcium and sodium) increased and consumption of sweetened beverages, snack chips and percentage of energy from fat decreased. Most of the desired healthier nutrients were obtained from the NSLP, which also showed a significant increase in participation. On most days, 4 to 5 fruit and vegetables were available on the NSLP menu. Dr. Cullen concludes, "We can document that limiting access to less healthy foods and beverages for middle school children while providing a variety of healthful food choices like fruit and vegetables, encourages children to choose the healthier alternatives in the NSLP and improves overall diet quality." NOTE TO PRACTITIONERS AND PARENTS: Encourage local school districts to adopt policies promoting healthy food and beverage choices in schools. ********** A Successful Intensive School-Based Weight Loss Program Childhood overweight is increasing with Mexican Americans having some of the highest rates. School-based interventions traditionally attempt to increase physical activity and improve nutrition. Some school-based interventions have successfully increased fruit and vegetable consumption and physical activity and/or decreased consumption of high-calorie, low nutrient foods. However, most school-based intervention programs report limited success in decreasing children's weight. Dr. Craig Johnston and his colleagues at the USDA/ARS Children's Nutrition Research Center developed and implemented an intensive 6 month school-based intervention that has been successful in decreasing obesity among 10-to 14-year-old Mexican-American children. The behavioral school-based program has several unique characteristics: --- 12-week intensive intervention at a charter school with a 95% Mexican American population, --- Intervention, led by research staff, took place during a standard school period (35-40 minutes), --- Nutrition instruction (one class/week) with encouragement to make healthy choices from available options, and --- Physical activity training (four classes/week) with the first 6 weeks emphasizing building endurance, strength and flexibility and the second 6 weeks emphasizing sport skill development for school or community-sponsored teams (e.g. jumping rope, basketball, kickboxing). Results of the intensive school-based intervention have been encouraging. Significant decreases in BMI z-scores at 3 and 6 months were demonstrated by the participating children when compared to the self-help control group of students. EDITOR'S NOTE: Body mass index (BMI) z-scores, also called BMI standard deviation scores, are measures of weight adjusted for the child's age, height and gender using the US Centers for Disease Control and Prevention 2000 growth chart data. Dr. Johnston adds, "Most schools do not have the luxury of this type of intensive intervention; however, we now know that weight reduction in overweight children is possible with an innovative and intensive program. Our next step will be to capitalize on this intervention so that it can be replicated in other schools." NOTE TO PRACTITIONERS AND PARENTS : Although most practitioners do not have the luxury of an intervention program with this level of intensity, increasing the intensity of a program is a key in improve outcomes. ********** Volunteers Opportunities Houston-area residents are invited to participate in the following nutrition research projects designed to help CNRC scientists learn more about the nutritional needs of children. The report also estimates whether Americans are meeting Federal dietary recommendations for each of the major food groups by comparing the data with dietary recommendations in the 2005 Dietary Guidelines for Americans and the MyPyramid Food Guidance System. Findings show that Americans do not meet the Federal dietary recommendations. For Americans to meet these recommendations, they would need to substantially lower their intake of added fats, refined grains, and added sugars and sweeteners and increase their consumption of fruits, vegetables, whole grains, and low-fat milk and milk products. The comparison includes two other USDA nutrition assistance programs, three cash assistance programs, and three programs providing noncash benefits other than food or nutrition assistance. Results show that the FSP and the Earned Income Tax Credit (EITC) present contrasting patterns. The EITC program has lower administrative costs and higher program access rates than the FSP, but the FSP is more successful in limiting overpayments. Missing information makes it hard to generalize across the other programs, but there is some evidence suggesting that programs with higher errors have lower administrative costs. Low administrative costs also appear to be inversely associated with good program access for recipients. Also, programs that are more highly targeted tend to have higher benefit delivery costs.
