Hello Sneeze, Lately I have had numerous requests from clientele for hands-on programs that meld nutrition information and cooking. I am looking for evidence-based culinary-nutrition programs for adults that are independent of the SNAP-ED program. Are there any programs that you know of or have had success with? In Marshfield, CCO works in cooperation with the Healthy Lifestyles-Marshfield Area Coalition (HLMAC). Lately when that happens, she has taken to calling me a bad feminist. Why not just wasteful, careless, or a bad environmentalist? Probably because she knows that linking my offenses to women’s welfare is a more effective one-two punch. And because climate change is also a women’s issue. As extreme climate events dominate the news, the impact from landslides, hurricanes and floods is felt most heavily in the developing world. And as the ones most often responsible for farming and feeding families, women have a special stake. When there is less food, they are expected to go without, yet they are often denied input into how the land is used. Producing wealth from the land, as Indian environmentalist Vandana Shiva puts it, has to be done “in partnership” with nature — not through dominating or profiteering off its plunder. To me, that means not draining natural wetlands to facilitate urban sprawl or industrial agriculture. I was sitting in a Register meeting this week with billionaire environmentalist Tom Steyer, wondering where eco-feminism might fit into the narrative of a major U.S. capitalist. A retired hedge fund manager, Steyer considers climate change the No. 1 issue in the United States. He was in Iowa to promote discussion of it in the presidential election campaign, through his organization, NextGen Climate. I didn’t have to wonder for long. Steyer talked of visiting a girls’ school in Kenya that he helps support. For that population, he said, climate change was the No. 1 issue, because the families are cattle herders — “and there’s no water.” And that’s an issue linking rural Kenya to urban California, where Steyer lives. Steyer’s organization tries to engage people under 30 on climate change and energy issues. He says 42,000 of them last year signed a card pledging to vote for candidates who make that a priority. Young people may feel a particular urgency because they’ll inherit this mess we’ve made. But in different ways and for different reasons, climate change is percolating as a priority among varied constituency groups around the world. It’s of growing concern to big businesses, says Steyer, many of which are moving toward renewable energy. He mentioned Alcoa, GE, Cargill, Pepsico, Goldman Sachs and UPS. It’s also a recruitment issue, because to get highly educated talented employees under 30, he says they need a corporate culture that’s aware. For labor, green technologies may hold the key to jobs of the future. Steyer and his wife founded two renewable energy research organizations. He says, “Per kilowatt hour, solar requires eight times more jobs than fossil fuels.” As he has grown more religious, Steyer said he has also taken more seriously the pope’s encyclical to protect all the Earth’s species. He thinks Pope Francis’ recent assertion that reckless behavior has led the globe to a breaking point is driving an increased willingness to address the problem.

Schools Fight Sustainability One Lunch Plate at a Time

That’s how many lunches are served every day by six of the largest school districts in the country—and that’s how many plastic plates are no longer heading straight to the landfill on a daily basis, thanks to the efforts of The Urban School Food Alliance. In 2012, school administrators in Los Angeles, New York City, Orlando, Chicago, Dallas and Miami joined forces to form the Urban School Food Alliance. This past May, they launched one of their most significant ventures yet: Getting rid of plastic lunch trays in favor of compostable lunch plates at 4,536 schools throughout the United States. As Maanvi Singh at NPR writes, “The polystyrene used in traditional lunch trays is a petroleum-based plastic that won’t break down for hundreds of years. When the trays end up in landfills—and 225 million of them do every year—they leech pollutants into the water and air.” These new compostable plates are instead made of recycled newsprint, allowing them to easily break down within weeks in a commercial composting facility. And they’re only a fraction more expensive—$0.009 extra apiece, compared to conventional plastic trays. That’s a small price to pay to relieve landfills of such a major burden. Another bonus? These new paper lunch plates are actually easier for kids to hold than the plastic trays. And because all of a child’s lunch waste can go into one bin, there’s less contamination involved in the process. Eric Goldstein, Chairman of the Urban School Food Alliance, states that while he hopes the new plates will help teach school children about renewable resources, he also hopes this initiative will pressure cities to develop better composting facilities. As it stands right now, not every school’s city can successfully compost the new paper plates just yet. Although New York and Los Angeles have municipal composting services, the other four cities in the alliance do not; nor do they have biodigestors, which turn compostable waste into natural gas. To deal with this problem, the alliance school districts without city composting services are turning to other ideas. The Miami-Dade School District is developing “in-house compost labs” connected to organic gardens at specific schools. Meanwhile, Chicago has received grants to start a composting pilot program at five of their schools. In order to justify long-term composting facilities in these cities, there must first be a steady stream of compostable waste being created. This new school lunch plate initiative might be just the ticket to move the needle—especially since composting is cheaper for cities, only costing around $20 per ton, compared to the $50-$100 per ton it costs to send trash to a landfill. So what’s next? The Urban School Food Alliance is now on its way to transitioning schools to compostable utensils, says Goldstein. If this is what it looks like when just six of the nation’s school districts start making efforts toward a more sustainable future, can you imagine what a dozen or more would accomplish?

In particular, significantly more students were in schools with healthy lunches the first year of the national standards than were just two years earlier. The study also found that, prior to the national standards, students in predominantly white schools and large schools were far more likely than those in more diverse and small schools to have access to healthier lunches, but that after the first year of the national standards many of those differences were no longer significant. Global agrochemical firm Monsanto just announced a $1bn investment in its new herbicide, dicamba, part of Roundup Ready Xtend, its system for genetically engineered crops such as soya beans and cotton. But, as we consider which paths to go down to solve the world’s food, energy, climate and health problems, are we spellbound by hi-tech answers over less glamorous, but potentially better, low-tech approaches? In discussions on global food and energy systems there seems a system-bias toward “shiny” solutions, creating a loaded and revealing default setting for both debates. Underlying, systemic problems to do with poverty, failed markets or overconsumption are glossed over when these solutions are publicised and resolve into arguments over whether you are for or against a particular technology. In the case of energy it becomes about support for nuclear power, and in global food systems about whether you do or don’t favour the genetic modification of crops. It is understandable that for public consumption, big complex debates get simplified, echoing former US president George W Bush’s binary doctrine of “Either you are with us or with the terrorists” in reference to the “war on terror”. But there’s more going on than that. The media seems like a moth to the flames of novel technologies, giving them seemingly disproportionate airtime compared to, say, sustainability options that grow from local, small scale roots that often build on indigenous practices. The former is usually cast as modern, progressive, objective and scientific; the latter is seen to be the opposite – regressive, romantic and an obstacle to progress. When reported, magic bullets rarely, if ever, get assessed alongside other strategies to achieve similar ends. What is the trade off, for example, in terms of jobs, costs, risk, security, speed of introduction and broader economic benefits of a single nuclear power station against the equivalent in generating capacity of small-scale, community-based renewable schemes? Instead, each time, the potential human development benefits of the hi-tech solutions get compared to the purely “ideological” concerns of environmentalists, as happened in recent debates about crops modified to carry the nutritional equivalent of fish oil. Criticism of magic bullet solutions often gets dismissed as ideological, overlooking the fact that magic bullets are typically designed to work with existing large-scale energy, transport and farm infrastructure, allowing the status quo to be maintained. This was seen with some of the early genetically modified crops. Monsanto caused a furore in the 1990s by considering a controversial crop technique dubbed the “terminator technology” that could have prevented timeless agricultural practices such as seed saving that are key to crop resilience and farmers’ livelihoods. While this technique was not commercialised, a similar outcome was achieved by Monsanto having its customers sign an agreement that states they will not save seed to plant the following year, ensuring the purchase of new seed every season. Several crops such as cotton and soy beans depend on proprietary pesticides and herbicides such as Monsanto’s controversial glyphosate-based Roundup brand. New technical innovations also benefit from the media coverage of being easily reportable. More complex approaches that look for better ways to do things at the level of the whole ecosystem, such as agroecology, which may answer more problems and represent more durable solutions, find it harder to grab the imagination. GM crops get about 30,000 news hits on Google, agroecology around 3,000. But to find the best rather than just the shiniest solutions, and ensure these get the right support, we would benefit from moving beyond a simple for or against mentality to properly assessing the range of options that give the fullest answers to a problem or range of problems. We can ask what is the problem to which GM crops are the only or best solution? There are almost always choices to consider. If weeds are a problem you can modify a crop for herbicide resistance, as Monsanto has done, or you can use a combination of unglamorous but effective ground cover, mulching, soil management, rotation, weeding or even use weed crops in other constructive ways. Or, while you might engineer a crop for added vitamin or mineral content, you could increase crop diversity, use other techniques like varietal selection and breeding for nutrition, or improve the buying power of communities and develop a wider range of locally available, nutritious food. Lacking official support or awareness, less shiny approaches don’t get the focus they deserve. The Wall Street Journal reported, for example, that less than 2% of the budget for research, extension and education from US Department of Agriculture goes toward certified organic farming. The danger of a focus on magic bullets is that, where hunger is concerned, it conveys the message that feeding the world is a technical problem, when decades of analysis show it to be a profoundly political and economic one. When it comes to transport should we prioritise the electric car or redesign cities for mass transit, cycling and walking? Or in energy, do we keep a big centralised system reliant on nuclear and carbon capture for fossil fuels, or move to a decentralised, distributed, renewables-based model. We face multiple, profound challenges to create thriving economies, generate mass employment, increase wellbeing and maintain our environmental life support systems. Technologies we choose have different effects on the economy and society they serve. It is not a case of simply substituting one for another. Variously they create more or fewer jobs, give people more or less control over their lives and livelihoods and are more or less prone to democratic control. They also differ hugely in terms of full cost accounting and the environmental, economic and security risks they generate. Instead of being constantly spellbound by leaps in technology, we need a bigger debate to assess their strengths and weaknesses to find those that will best support the type of world we want to save and create.
